Would there be any fitment issues with a 265/70R17 tire on the 17" oem trd rims on a stock 4x4? (ie: rubbing, etc)
specifically a cooper discoverer stc

No. They will fit just fine on a 2005+ stock Tacoma. I am running the same size on my stock wheels for winter tires. No problems at all.
